There are quite a few spices in this recipe that come together beautifully to make a perfectly seasoned soup. I’ve always loved smoked paprika so was really excited to see that listed as one of the ingredients. And yes…I am a kale lover so this soup was right up my alley. My kids, however, are not as big of fans although they do tolerate it as they know it is really good for them. They pointed out that it was really kaley 🙂 but they also said the broth was really good and ate it. So…👍

3 Ingredient Easy Meatloaf
It really doesn’t get any easier than this. Dump the 3 ingredients in a bowl and mix them up. I used my potato masher to mix it up. LOVE this tool for browning meat so it worked wonderfully for mixing in the stuffing.

Quick and Easy Steak Fajitas
These Steak Fajitas are so quick and easy that I’m not even sure it qualifies as a recipe! If you’re short on time but wanting to throw together a healthy meal, add this to your stash of go to recipes. You seriously can not get any easier than these Quick and Easy Steak Fajitas.
These are a go to in our house. I typically have extra tortillas on hand and I have a freezer full of venison so the steak is a quick grab. Onions are a pantry staple so the only thing I need to buy are colored peppers. I typically buy the three pack from Aldi or 6 pack from Costco. If I need a pepper for a recipe, I’ll have some leftover so…Quick and Easy Steak Fajitas gets added to the menu 🙂

Chicken with Tomato Cream Sauce
I chose to serve this dish over pasta. The sauce was a lot thicker than I expected so I thinned it with some pasta water…worked perfectly! The consistency was exactly what I was looking for and it still had a ton of flavor.

The BEST Dry Erase Erasers
To make the situation worse, the markers don’t erase well…and that’s if the students actually have an eraser left to use that isn’t so full of ink that it smears more than it erases. Ugh! The erasers are gross…and they get gross quick. I was on a hunt for the BEST dry erase erasers.

I’m lucky enough to have my son home so after I prepped all the ingredients, I left him post it notes with instructions (yes, that’s the teacher in me :)) on what needed to be done at what time so that dinner could be served at a decent time.

Stuffed Sweet Potatoes
I chose to use my air fryer to cook the potatoes to get that fluffy inside and crispy skin. Xander was recruited to put them in the air fryer so they would be done when I returned home from the girls’ practices. I prefer the air fryer over the microwave but when in a time crunch, the microwave works just fine.

No Knead Sourdough Bread
Looking for that perfect bread recipe to serve with dinner? This no knead sourdough bread recipe may become your new go to favorite! Since there is no kneading required and it requires very little effort. However, it does require some planning as the dough needs to be made the day before you plan to bake it.
The first thing you will need for this recipe is sourdough discard. I have a jar of sourdough starter that lives in my fridge (thank you Janinne). If you don’t have any YET, follow the directions here to make your own. Each week I take it out, make a new recipe, feed it, and put it back in the fridge to grow. We have “Sourdough Saturdays” so I remember to make a recipe using the discard each week 🙂

Easy Way to Organize Recipes
If you are looking for an easy way to store, organize, and quickly locate your growing collection of recipes, I have a solution that I stumbled upon years ago. When I first started to LOVE to cook, I would find recipes in cookbooks. Locating the recipes I previously made was tough…and there was storage issue because cookbooks aren’t exactly small. Now I have completely shifted gears and have turned to an app to assist in helping me to organize recipes.
There are many recipe keeper apps available. When I first decided to give digital storage and organization a try, I tested numerous apps (just the free or trials so I could see which best fit my needs). The clear cut winner for me was Recipe Keeper.

Chickpea Pasta with Beef Ragu
My girls do not like raisins so I didn’t broadcast their addition to this recipe. They didn’t even know there were any in this pasta until they had nearly cleaned their plates. Lexie was on her last bite and noticed one on her plate. They added a nice texture and sweetness to the dish and after she noticed it, she actually continued to eat it with her last bite. The raisins really fit in well with the flavor profile so I would keep them in this recipe even if you’re feeding someone that typically doesn’t care for raisins by themselves. Just my two sense 🙂

Chicken Enchiladas - Quick & Easy
Edible Cookie Dough
Lexie decided to make an edible raw cookie dough recipe this afternoon (the green chunks are not celery…they are Frankenstein Reese’s Peanut Butter cups 🙂 ). I asked her take some pictures so I could share her recipe. After an eye roll, she proceeded to make her treat. Much to my surprise, she airdropped me photos when she was done. Lucky you…now I get to share! This is a good one for the kids. Kenxie can make this by herself too and it makes a fairly small batch so…they can each add the mix ins that they want. No arguing needed 🙂

17 quart Air Fryer and Dehydrator
I know there’s a lot of hype about air fryers. I bought my first one back in 2016. My family quickly outgrew it…I couldn’t fit enough in the basket for a full meal. When my toaster broke, instead of replacing that, I opted to purchase this larger, upgraded air fryer to use as a toaster, air fryer, and dehydrator. Arguably one of the best decisions of my life! I use this for EVERYTHING! One of my fav recipes…core a few apples and slice using a mandolin. Lay slices on the trays (you get 5!) and cook for 1 hour at 215 degrees. That’s it! When you take them out, you have delicious, crunchy apple chips. Addicting…that’s for sure…and no added sugars or oil, just apples
Bag Clips
Oh my goodness! What did I ever do without these?!?! Time to ditch all of those plastic twist ties. Once we open any kind of bag in the kitchen, the plastic twist tie is tossed and replaced with this fancy contraption. I absolutely LOVE them!
Potato Masher
I think I’ve used it once to mash potatoes…but I use it all the time to brown ground meats. It breaks the meat up perfectly with little effort. A welcome addition to my kitchen tools!
Mini Utensils
These silicone mini utensils are wonderful! The perfect size for a small job. I no longer have my full size whisk falling out of a little prep bowl as I’m whisking together ingredients. Mine were an Aldi find but these ones on Amazon are quite similar.
Mini Crock Pot Warmer
This is a truly amazing little appliance! If you’re craving a warm lunch without the microwave line or trip to the teachers lounge, this is for you. I plug mine in an hour before my lunch and when I sit down to eat, I have a warm meal. It’s the little things

Sourdough Coffee Cake
This week, the kids requested Coffee Cake and settled on this cinnamon flavored pan of yumminess. It’s an easy recipe that can be whipped up quickly. Pretty standard pantry ingredients too so no need to make an extra trip to the grocery store for specific ingredients. Kenxie joined me in making the coffee cake tonight.
Kale & White Bean Pot Pie
My kids aren’t crazy about kale but said that it actually tasted really good in this recipe. I’m the complete opposite…I will steam a big bag of kale for the week and eat it as a snack or side with dinner. If I don’t have anything else handy, a plate of steamed kale with an over easy egg on top is a go to meal for me. Yum!
