Chicken Fajita Pasta

With a softball tournament tomorrow, Kenxie requested pasta to give her some extra energy. I found this Chicken Fajita Pasta and thought it sounded pretty tasty. I was had great flavor!

I did alter the recipe a bit based on what I had on hand at home. I love recipes with wiggle room where you can adjust them to meet your needs.

Turkey Skillet with Veggies


It's not very often I cook with ground turkey. I've made plenty of recipes that call for ground turkey, but I typically sub it out for ground venison instead. For this recipe, I actually used ground turkey...and it was delicious!

I LOVE all of the veggies in this skillet. This recipe called for smaller portions of the veggies but I decided to add a bit more. Rather than using part of the can of black beans, I used the entire can. You can never go wrong with adding a few extra veggies 😁

Lomo Saltado (Peruvian Beef Stir Fry)

If you’re looking for a change from your traditional stir fry, give this Peruvian Beef Stir Fry a try. It is loaded with fresh veggies but has that kid appeal as well with the addition of the french fries. Before stumbling upon this recipe, I had never heard of Lomo Saltado. Now, my mouth waters when I hear it!

Chickpea Pasta with Beef Ragu

Chickpea Pasta with Beef Ragu
For dinner tonight, I served a delicious, quick and easy Moroccan spiced pasta with beef ragu recipe. The recipe called for beef ragu but I substituted venison instead to make it a bit healthier. The pasta was a hit and Xander went back for seconds 🙂

My girls do not like raisins so I didn’t broadcast their addition to this recipe. They didn’t even know there were any in this pasta until they had nearly cleaned their plates. Lexie was on her last bite and noticed one on her plate. They added a nice texture and sweetness to the dish and after she noticed it, she actually continued to eat it with her last bite. The raisins really fit in well with the flavor profile so I would keep them in this recipe even if you’re feeding someone that typically doesn’t care for raisins by themselves. Just my two sense 🙂

Sweet Potato Hash with Chicken Sausage

Sweet Potato Hash
I picked this sweet potato hash recipe because knew I was going to be a little pressed for time for dinner tonight. This recipe was quick and easy to prep and cook. A bonus…it only has 3 ingredients! Yes, that’s right. THREE INGREDIENTS (and a little oil)! My shopping list this week only contained 16 items and that included 3 gallons of milk! I was able to get everything I needed for this meal at Aldi and felt pretty good about being able to prepare a fairly healthy meal with 2 of the 3 ingredients being fresh produce.
