Strawberry Pineapple Salsa

 

We went strawberry picking and had A LOT of strawberries to use. I made a rhubarb salsa years ago with cinnamon and sugar chips and knew there had to be a good strawberry salsa recipe out there too. I found one and gave it a try.

I liked the salsa. I would pile it high on the chips for a tasty snack. The kids were not huge fans of the salsa but did enjoy the chips.

Peanut Butter Banana Cups



If you have a sweet tooth, this recipe for Peanut Butter Banana Cups is one that you have to try. They are super easy to put together and then you just wait for them to freeze.

I did not add the additional powdered sugar that was mentioned in the recipe to help prevent the peanut butter mixture from softening too quickly. I can hardly wait more than a minute to eat the PB cups once I take them out the fridge so softening too quickly wasn’t an issue for me.

Sourdough Brownies


These Sourdough Brownies may not look the nicest when they come out of the oven but they are a rich, tasty treat. A spoonful is all you need to satisfy that sweet tooth craving!

This recipe reminds me of a flourless chocolate cake. It has a fudge like taste and almost seems undercooked. The brownies are very dense and rich. They are the perfect brownie to pair with a scoop of ice cream.

Easter Lamb Cake


One of our Easter traditions is to make an Easter Lamb Cake each year. This year, having a different, less time consuming dessert was mentioned but my kids were having no part of it. Having an Easter Lamb Cake is a non-negotiable for them.

The mold we use is old so when the recipe stays to make sure the mold locks, for us, that means securing it together with a piece of yarn or string. Our pan doesn’t have any steam vents which would allow me to check for doneness. Instead, I cook my cake for one full hour every year. So far so good🤞 If you’re looking to purchase a lamb cake pan, here is a great option with the steam vent.

Oreo Ice Cream Cake

Oreo Ice Cream Cake

For Kenxie’s 12th birthday, she requested an Oreo Ice Cream Cake. I wasn’t able to find a recipe that I wanted to try without added whipped cream (ugh…I don’t like anything fluffy and cooking with it makes me nauseous) so I improvised and made it up as I went.

I started with a springform pan to make the crust. I used a 10 inch pan. I wanted a thicker crust since I LOVE oreo crusts. I used 35 oreos and ground them up to very fine crumbs using a food processor. Combine the crumbs with 5 tablespoons of melted unsalted butter.

This Easy Puppy Chow recipe could not be any easier. All you need is 4 ingredients and you have a tasty snack (or dessert) in a matter of minutes.

There are much more complicated Puppy Chow recipes out there but this one tastes good and the best part is, the kids can make it all by themselves. I’m all for kids taking over the kitchen 🙂

Air Fryer Fried Oreos

We stumbled upon this recipe for Fried Oreos and Kenxie’s eye immediately lit up. She could not wait to get all the ingredients so she could make these all by herself. The recipe was super simple and easy for her to follow. She did a great job making the Fried Oreos.

Once she had them made, she was ready to place them in the air fryer. No oil needed for this fried treat! I was a little doubtful that the dough would be done in 4 minutes but it was. The bottom stuck slightly to our wire trays in the air fryer but not enough to cause a hole in the bottom of the treat.

$250 Cookie Recipe

$250 Cookies
I wanted to love this $250 Cookie Recipe. I was hoping these cookies would live up their name but I was left underwhelmed. They were just another cookie…not bad just ok. Nothing I’m left craving more of. When it comes to cookies, I want them to be worth the extra calories not just an ok dessert. That being said, I’m glad we tried these $250 Cookies at least once. Just to say that we gave it a go 🙂

Lemon Sourdough Cake

Super simple and delicious Lemon Sourdough Cake. I love that this cake isn’t overly sweet. It has a bit of a doughy texture yet it’s light and airy. Our whole family likes it and struggles with stopping after just one piece. It makes a 9×13 pan but it doesn’t last long in our house…a few days max and it’s already devoured.

Edible Cookie Dough

Edible Cookie Dough

Lexie decided to make an edible raw cookie dough recipe this afternoon (the green chunks are not celery…they are Frankenstein Reese’s Peanut Butter cups 🙂 ). I asked her take some pictures so I could share her recipe. After an eye roll, she proceeded to make her treat. Much to my surprise, she airdropped me photos when she was done. Lucky you…now I get to share! This is a good one for the kids. Kenxie can make this by herself too and it makes a fairly small batch so…they can each add the mix ins that they want. No arguing needed 🙂
