Kale & White Bean Pot Pie

I made this Kale & White Bean Pot Pie recipe over the weekend so had a bit more time to prep and bake. I wouldn’t have the time to make it during the week, but it was worth the effort today 🙂 It was a tasty meal! One serving was plenty to fill you up and it was a healthy meal too.

My kids aren’t crazy about kale but said that it actually tasted really good in this recipe. I’m the complete opposite…I will steam a big bag of kale for the week and eat it as a snack or side with dinner. If I don’t have anything else handy, a plate of steamed kale with an over easy egg on top is a go to meal for me. Yum!

Substitutions/Additions for Pot Pie:

  • used one tablespoon of oil instead of two
  • doubled the amount of carrots and celery
  • used a 12oz bag of chopped kale
  • didn’t have any fresh chives so I used about 1 tablespoon of dried chives

Kids Comments: Kids usually don’t care for the taste of kale but thought it was good in this recipe. They loved the biscuits!

Make it Again: Yes, it was tasty and healthy! Just need a lazy weekend day to make it 🙂
