You can make this recipe pretty quickly but if you'd like to make the prep a bit shorter, you can opt to buy premade guacamole instead of making your own.
It really doesn't get much easier than this. I have all of the components ready to go and the kids assemble these tostados as they are ready to eat. Because all of the components are kept seperate, these are also a great lunch to have on hand in summer when the kids are home and starving all of the time. They can put these together by themselves whenever they'd like.
Substitutions/Additions made by Cooking After Class for Grilled Shrimp Tostadas:
- used cooked medium shrimp because that's what I had in the freezer
- used regular salsa instead of salsa verde
- eliminated queso
