Shrimp and Grits
The first time I had shrimp and grits, I was on vacation. It was so delicious that I asked the chef for the recipe. What I received was a list of ingredients 🥴 So…I searched the internet and found this recipe which contained nearly an identical list of ingredients. Once I made these shrimp and grits for the first time, my hunt for the perfect recipe was over. THIS IS IT!

This dish is sooo good but sooo not healthy. We all deserve a splurge every once in a while. Tonight was my night! Each time I make this dish, I contemplate changing a few things to make it a bit healthier but it’s so good the way it is that I just can’t bring myself to make any additional changes. I just savor every single bite…it’s seriously that good 😋

Substitutions/Additions for Shrimp and Grits:

  • decreased better to 2 tablespoons
  • used 5 minute quick grits because it’s what I had in the pantry
  • substituted green onions for scallions

Tips for making Shrimp and Grits:

  • if you’re short on time, use quick 5 minute grits instead of stone-ground grits (cuts the cook time down considerably…I had dinner ready to serve in less than 30 minutes)
  • serve immediately as the recipe indicates…the grits thicken as they stand and are best served right away nice and warm
  • don’t skip the bacon grease…I was so tempted to drain the pan before adding the shrimp but cooking the shrimp in the bacon grease makes the dish
