Chicken Fajita Pasta


With a softball tournament tomorrow, Kenxie requested pasta to give her some extra energy. I found this Chicken Fajita Pasta and thought it sounded pretty tasty. I was right...it had great flavor!

I did alter the recipe a bit based on what I had on hand at home. I love recipes with wiggle room where you can adjust them to meet your needs. 

I love finding and trying new recipes but I have to be honest, I'm not very good at following directions exactly as they are written. I haven't had too many epic fails so I don't see that changing anytime soon. 

Substitutions/Additions made by Cooking After Class for Chicken Fajita Pasta:

  • used rotisserie chicken so I didn't season the chicken since it was already cooked
  • substituted plain greek yogurt for sour cream
  • used 3 peppers...bought a pack of yellow, red, and orange so I used them all...the more veggies the better

Tips from Cooking After Class for making Chicken Fajita Pasta:

  • you could easily make this a vegetarian dish by eliminating the chicken and adding in some black beans instead
