Substitutions/Additions made by Cooking After Class for Mushroom and Spinach Pasta:
- didn’t use fettuccine or linguine, I used pasta that I had leftover in my pantry
- used 1 tablespoon of oil each time it was called for in the recipe instead of 2 tablespoons
- didn’t use any fresh basil but will if I make this again in the summer when I have some available
- used white mushrooms instead of cremini
Tips from Cooking After Class for making Mushroom and Spinach Pasta:
- double the mushrooms and spinach, I LOVE veggies and this could definitely use more
- don’t leave out the pistachios…they were amazing with this pasta
