"Leftovers" Biscuit Cups


These “Leftovers” Biscuit Cups can be made with a variety of…leftovers! I made them using sloppy joe meat today.

You could also fill these biscuit cups with leftover taco meat, chili, baked beans, casseroles (bacon cheeseburger casserole, broccoli and chicken alfredo casserole, etc), even beef stew. You could really fill a biscuit cup with just about anything. Turn your leftovers into a new dish!

Before baking, I typically top the cups with a bit of cheese. You can also add a little sauce if it fits with your dish…perhaps some BBQ sauce to give your leftovers a fresh new bite. The possibilities are endless with this versatile recipe.

Substitutions/Additions made by Cooking After Class for Biscuit Cups:

  • I don’t follow the recipe for the sloppy joe, I use the biscuit cup idea to use up leftover meat. This time, I did use leftover sloppy joes.
  • I used a combination of cheddar and mozzarella cheese
  • I do not brush the biscuits with an egg wash before baking…I’m keeping it simple 🙂

Tips from Cooking After Class for making Biscuit Cups:

  • Try using Trudeau Silicone Muffin Pans so you don’t need to butter/grease the pan and the muffins lift out so cleanly. It also comes in a jumbo size too! With one roll of refrigerated biscuits, I made 6 jumbo cups and 4 regular cups.
