With only 5 ingredients needed to make this dish, it only takes a quick trip to the grocery store to get all that you need. I like to buy my pesto at Costco but the container is HUGE. So…as it approaches the expiration date, I freeze it in silicone trays. For this recipe, I realized I only had one cube left so pesto in now first on my shopping list for my next trip to Costco.
I use silicone molds when freezing leftover food or ingredients…in this case pesto. These souper cubes are wonderful because they come with lids as well. It’s best to get the variety pack so you have all the sizes you will ever need. When’s the last time you finished the entire container of heavy cream before it went bad…freeze it! What about a big batch of chili when you can’t stomach the thought of one more bowl of leftovers…freeze it and then thaw when you want one bowl, not six 🙂
I served this Pesto Ravioli with some Sourdough Bread. The kids all loved the meal and were even more invested since they pretty much made it by themselves. Quick, Easy, Delicious!
Substitutions/Additions made by Cooking After Class for Pesto Ravioli:
- used an 8 oz bag of spinach instead of 5 oz
