Salmon Tacos with Pineapple Salsa

I think I’d be open to trying ANY kind of taco 🌮 I love fish tacos so thought that I’d give these Salmon Tacos a try. The addition of the pineapple salsa sealed the deal for me…I LOVE the pineapple peach salsa at Target (Good & Gather brand) and was looking forward to using it in this recipe.

I did make a few changes from the original recipe. I put the chili powder and salt on the salmon right away (I didn’t use an oil) and cooked it in the air fryer. Just clicked the fish setting 🙂

Substitutions/Additions made by Cooking After Class for Salmon Tacos with Pineapple Salsa:

  • only used three salmon fillets and sprinkled both sides with salt and chili powder
  • Use Good & Gather (Target Brand) Pineapple Peach Salsa 😋 (I could eat the entire jar in one sitting…it’s sooo tasty!)
  • served the coleslaw mix on the taco rather than on the side…we liked it all together in one bite with the added crunch

Tips from Cooking After Class for making Salmon Tacos with Pineapple Salsa:

  • can use an air fryer instead of the oven
  • These “taco accessories” are not required, but they certainly are helpful if you’re a serious fan of tacos. Making tacos (and keeping them pretty) is super easy with these taco holders. This tortilla warmer is a must have! You’ll wonder how you ever made it through Taco Tuesday without it.
