Mom's Lasagna



The ultimate comfort food...Mom's Homemade Lasagna. Our recipe may not be your favorite but it's my favorite lasagna recipe :) My kids are big fans as well!

Some of the best perks about making lasagna
- the kids are happy
- there are leftovers for the kids to eat on a busy weeknight
- if you add spinach, veggies are included
- you can make it ahead of time and refrigerate until you're ready to bake it

Tips from Cooking After Class for making Mom's Lasagna:

  • It's ok to be a bit creative with this recipe. I rarely follow it exactly. Approximations and using ingredients you have on hand will work fine. 

Mom's Lasagna

Ingredients

  • Lasagna noodles (I use no bake but you could use regular as well if you'd like to boil the noodles first)
  • Cottage cheese- 24 oz container
  • 1/4 cup Parmesan cheese
  • Mozzarella cheese
  • Cheddar cheese
  • 1 pound Mild Italian sausage
  • One clove garlic
  • One jar of pasta sauce (store bought or homemade...whichever you prefer)
  • 1 tablespoon Parsley Flakes
  • One bag/container frozen spinach (thawed, then squeeze out excess moisture)
  • 2 eggs

Directions

  • Fry sausage, add garlic to the sausage. Drain grease. Add pasta sauce and simmer for 30 minutes.
  • Drain the cottage cheese. Place in a bowl and add two eggs, 1/4 cup parmesan cheese, parsley flakes, and spinach. 
  • Place 6 noodles flat in the bottom of a 9x13 pan. If you are using regular noodles, you will need to boil them prior following the directions on the box. For no boil noodles, place them directly from the box to the pan. Add half cottage cheese mixture. Add half meat mixture. Place six more noodles down. Add remaining cottage cheese mixture. Add remaining meat mixture. Top with mozzarella and cheddar cheese. Use as much as little as you'd like. You can also use an Italian Blend of cheeses. 
  • Follow the directions on the noodle box to see how much water needs to be added to the pan for the no boil noodles. Cover with foil. (I typically place my lasagna in the fridge now until I'm ready to bake it later in the day or the following day.)
  • Bake at 375 degrees for 45 minutes. Uncover the last 10 minutes of baking. If you have refrigerated your lasagna prior to cooking, plan on baking closer to 1 hour to heat through.
