I couldn’t get enough of these…they were that good! Instead of having a third taco 😬, I added some lettuce to a bowl and topped it with the chicken, veggie, and cream. It was a delicious BBQ chicken salad. A little bit healthier without the added tortilla but still all the same flavors.
Substitutions/Additions made by Cooking After Class for BBQ Chicken Tacos:
- omitted the olive oil…just warmed the veggies in a non stick skillet
- used an orange pepper instead of red
- used a drained can of corn instead of frozen corn
Tips from Cooking After Class for making BBQ Chicken Tacos:
- If you have a Costco nearby, purchase a Rotisserie Chicken for $4.99 and shred the meat. It is perfect for these tacos!
- These “taco accessories” are not required, but they certainly are helpful if you’re a serious fan of tacos. Making tacos (and keeping them pretty) is super easy with these taco holders. This tortilla warmer is a must have! You’ll wonder how you ever made it through Taco Tuesday without it.
