Cauliflower Taco Bake
I wanted a easy casserole to throw together earlier in the day and bake later. This Cauliflower Taco Bake fit the bill and provided us with a tasty dinner with very little effort. There is a lot of cheese in this dish but it is awfully convenient to have a one dish meal that contains the meat and veggies in the same dish.

This recipe has you blanch the cauliflower. I chose to steam the cauliflower instead. I have an electric veggie steamer that I could have used but instead I chose to steam in the microwave using my Epicure Multipurpose Steamer to make the process a bit quicker tonight. Either way works well 🙂


Substitutions/Additions made by Cooking After Class for Cauliflower Taco Bake:

  • used venison instead of ground beef
  • eliminated oil
  • used 1/3 heavy cream and 1/3 skim milk
  • 1 tbsp butter instead of 2

Tips from Cooking After Class for making Cauliflower Taco Bake:

  • Can make it ahead, refrigerate, then bake later
  • steam the cauliflower instead of blanch in boiling water to preserve more nutrients
